When resident Ruby “Dot” H. recently requested a birthday meal — crab-stuffed shrimp, asparagus, and a roll — Chef Ashley Fouquet prepared it to order, just the way she liked it. For Fouquet, this wasn’t out of the ordinary, but rather how she approaches every day.
With 16 years in food service, including seven years as a chef, Fouquet leads The Ridglea’s dining program with a focus on scratch-made meals and resident choices.
“People often assume dining in senior living means limited choices or pre-made food,” Fouquet said. “That’s not what we do. Everything is made from scratch. Residents know they can ask for something, and we’ll prepare it.”
Fouquet’s menu reflects both her skill and the preferences of those she cooks for. Her King Ranch Casserole is requested so often it’s become a regular feature. Filet mignon, crab cakes, and lobster are frequent requests, especially for birthdays.
“The meals Ashley creates are a daily part of how we support the residents,” said Stephanie Williams, Executive Director of The Ridglea Senior Living. “It’s about more than nutrition. It’s about making someone feel known.”
For Fouquet, the work is steady and personal. “You don’t always know what kind of day someone is having,” she said. “But you can do your part to make a moment better. For me, that happens through food.”
